First and foremost, it’s important to harvest your corn at the right time. Corn is best picked when the silk is dry and brown, and the ears are full and plump. Once harvested, cool the corn immediately to prevent spoilage. Place the ears in a bucket of ice water for about 30 minutes to chill them down. This step is crucial in preserving the corn’s crispness and flavor.
After chilling, remove the corn from the ice water and dry it thoroughly with a clean towel. This will help prevent any moisture from promoting mold growth. Now, you have a couple of options for storing your corn.
One method is to wrap each ear of corn in a damp paper towel and place it in a plastic bag. Make sure the bag is not sealed tightly, as this can cause the corn to sweat and become mushy. Store this bag in the refrigerator’s crisper drawer, where the temperature is cool and consistent. This method allows the corn to stay fresh for up to three to four days.
Alternatively, you can blanch the corn before storing it. Boil a large pot of water and add a pinch of salt.
